Chicken Salad

This easy chicken salad recipe can be made in a flash, and customized with your favorite ingredients, like eggs, grapes or raisins. (You can also follow this recipe using tuna instead of chicken, and it works just as well!) Make a chicken salad sandwich… Eat it up with crackers… Or add a dollop to a greens salad for a healthy protein boost. No matter how you enjoy it, this is one chicken salad recipe you’re sure to use again and again.


  • 2 Cans Chicken, drained
  • 1/2 cup Onion, chopped
  • 1/2 cup Celery, chopped
  • 1 head Romaine Lettuce
  • 1/2 cups Mayonnaise
  • 1 tsp Dry Mustard
  • 1 tsp Garlic Powder
  • 1 sleeve Saltines


1. In a medium bowl, mix together the Portmann’s Mayonnaise, dry mustard and garlic powder.

2. Add onion and celery to the mayo mixture, and mix again until they’re evenly distributed.

3. Place the drained chicken in a separate small bowl. Using a fork, break up the chicken to create shreds or very small chunks.

4. Add chicken to the mayo mixture and mix well. Lightly press down the chicken salad in the bowl, then invert the bowl over a plate covered with leaf lettuce. Serve with crackers.


While shopping for tuna, we picked up chicken by mistake, but we ended up creating an easy chicken salad recipe that was even better than the tuna. There’s no need to add salt and it has a milder taste. Tuna salad lost out to chicken salad for us!
