Banana Nut Bread

Ingredients

  • 3 c Ginger Evans granulated sugar
  • 4 Coburn Farms eggs
  • 1 1⁄2 c Buttermilk
  • 4 c Ginger Evans self rising flour
  • 1 c pecans or walnuts, chopped
  • 1 c Westcott Vegetable Shortening
  • 2 t Marcum Imitation Vanilla
  • 2 c Ripe bananas, mashed

Instructions

Cream sugar and shortening, add eggs one at a time to mixture. Mix well, add vanilla. Gradually add flour and buttermilk to creamed mixture. Mix well. Stir in bananas and nuts. Bake in 4 loaf pans, that have been sprayed with Westcott cooking spray, for 45 minutes until nicely browned.

Notes

Freeze the other loafs for later, use or give as gifts. Remember the riper the bananas the more moist the bread will be.
