Quesadillas
Bake chicken in oven 45 minutes on 425 in a casserole pan. Let cool than place in 10 inch skillet. Mix in taco season,then fill packet with water and mix with chicken. Heat another skillet and butter one side of tortilla place in skillet butter side down. Put about 3 tbs. seasoned chiken on tortilla, spread around to edges. Then add 3 tsp of each, salsa and conqueso, just drop in different spots on top of chicken, butter another torilla, plac on top, butter up. Push down with spatula to spread conqueso and salsa and cook 2 minutes, using wide spatula, flip and brown the other side. Top with salsa, conqueso or Coburn Farms sour cream.
I am a single mom with 3 kids and really got tired of making the same old thing. I had all these things at home and actually used leftover chicken the first time. It is very quick, easy and yummy!!
