Cinnamon Banana Muffins

Ingredients

  • 1 3⁄4 c Ginger Evans sugar
  • 2⁄3 c Westcott shortening
  • 1 t Marcum vanilla
  • 2 Coburn Farms eggs
  • 3 Mashed Bananas
  • 2 1⁄4 c Ginger Evans self rising flour
  • 1⁄2 t Ginger Evans baking soda
  • 1⁄2 t Ginger Evans baking powder
  • 1 T Marcum cinnamon

Instructions

Preheat oven 400 degrees. Mash banana's in bowl with fork.  Add 1 1/2 cup sugar and shortening mash with fork till crumbly.  Add eggs, vanilla and 1/2 tsp. cinnamon - mix.  Add flour, baking powder and baking soda.  Pour into muffin tin and bake 15 minutes.  While warm dip muffin tops into mixture of 1/4 cup sugar and 1/2 tsp. cinnamon.

Notes

I needed something quick for breakfast that you could make ahead.  I always have bananas ripening faster than we can eat them.  My family likes muffins for breakfast and snacks between meals.  This is a good on the go food.
