Breakfast in a dish

Ingredients

  • 1 lb Farmington sausage
  • 1 lb ground beef
  • 1 chopped onion
  • 3⁄4 c mushrooms (chopped)
  • 1⁄2 c green pepper (chopped)
  • 1 pn Marcum salt
  • 1 pn Marcum pepper
  • 2 T Home Churned butter (melted)
  • 2 c Coburn Farms shredded cheese
  • 12 Coburn Farms eggs

Instructions

Cook sausage, beef, onions, green peppers and mushrooms until meat is no longer pink and drain. Salt and pepper the meat mixture and set aside.  Preheat oven to 325. Pour melted butter in the 13x9x2 baking glass dish. Sprinkle the butter with 1 cup of cheese. Beat 12 eggs and pour over cheese. Top with the meat mixture. Cover and refrigerate and 8 hours or overnight. Remove 30 minute before baking. Bake uncovered for 35 to 40 minutes. Let stand 10 minutes before cutting.

Notes

This is a dish I make when we have breakfast at work. I make it the night before and cook it while I am getting dressed for work. By the time I get to work it is still hot and I have never had any left overs. You can even spice it up with Sierra Miguel Jalapenos. It is good.
