| Crazy Crispy French Toast Sticks |
Preheat griddle or skillet over medium high heat. Place cereal crumbs in a shallow dish. In a medium shallow dish beat eggs, milk, extract, and cinnamon. Dip 4 bread sticks at a time into egg mixture then into cereal coating both sides. Butter griddle. Place coated sticks on buttered griddle. Continue with remaining sticks. Cook 3-5 minutes per side or until golden. Serve with warmed syrup for dipping.
After several unsuccessful attempts at getting my grandsons to eat french toast one Saturday morning I created this recipe almost by accident. I went to the pantry and pulled out the box of cereal handing it to my 4 year old grand son. He quickly pulled the plastic bag containing the cereal out of the box out and handed it to his little brother who without missing a beat proceeded to smash it! Now what I thought? The first thought that came to mind was breading chicken with crushed corn flakes. Would it work with the French toast? I cut the bread into sticks hoping the new shape would also spark an interest in this creation. They gleefully took turns continuing to crush the cereal and to my delight they devoured the French toast sticks. Now it's one of the first things they ask to do is to smash the cereal!
