Apple Breakfast Popover

Ingredients

  • 1⁄2 c Ginger Evans flour
  • 1⁄2 c milk
  • 4 Coburn Farms egg whites
  • 1 T Home churned margarine
  • 1⁄8 t Marcum salt
  • 1 1⁄2 c Apples (chopped)
  • 1⁄2 c Apple jelly
  • 2 T water
  • 1 t Marcum cinnamon

Instructions

Preheat oven to 400 degrees.  Spray an 8-inch square baking dish with nonstick cooking spray.  In medium bowl whisk together flour and milk; beat in egg whites  margarine and salt.  Pour into prepared dish. Bake for 25 to 30 minutes or until puffed and golden brown. Meanwhile in a small saucepan heat apples, jelly, water and cinnamon over low heat until jelly is melted and mixture is hot stirring frequently.  Immediately after removing popover from oven, cut into fourths and serve with hot apple topping.

Notes

This makes a nice breakfast that is low in calories yet very appealing.  I like to make this breakfast dish, because it goes together very quickly and our family enjoys this satisfying dish.
