Sausage Sauerkraut casserole

Ingredients

  • 1 pk sausage links
  • 6 Apples
  • 2 cn Wylwood Sauerkraut
  • 1 1⁄2 c Tipton's Grove apple juice
  • 1⁄2 c Ginger Evans brown sugar
  • 1 ds cloves (optional)

Instructions

Brown the sausage links in a skillet, pour off the grease.  Core and section the apples (no need to peel them). Open the cans of sauerkraut and squeeze out the juice. Place apples, sauerkraut, then sausage in a crock pot electric cooker.  Sprinkle brown sugar on top and top with a dash of cloves.  Cook on low for six hours.

Notes

This is a variant on a German standard.  The sausage links give it a Texas twist.  I like to serve it to friends when the weather is chilly.  Because the apple juice and sugar take the acidic edge off the sauerkraut. This dish has turned a few of my friends into "kraut lovers".  It's great with beer and rye bread too.
