Halusky (Potato Dumpling Casserole)
Grate potatoes. Add salt, egg and flour mix well. If dough is very dry and stiff add about 1/4c. water. Drop small portions of dough from the tip of a spoon into boiling water. Boil for about 7 - 10 minutes. Drain and rinse. Place dumplings in a 2 quart casserole dish or a 8x12" baking dish. In a separate small sauce pan brown butter. Pour browned butter over the dumplings and the add the cottage cheese. Gently mix together and serve hot.
This Slovak version of halusky is an old family recipe from my mother-in-law. It was one that she grew up with and then my husband grew up with and now my children enjoy this ethnic favorite. The potato dumplings can also be served over cooked cabbage and onions instead of the cottage cheese but for our family the only way to serve them is mixed with cottage cheese! As far as we're concerned nothing tastes better than the tangy melted cottage cheese mixed with the warm dumplings.
