4 Bean Vegetarian Chili

1. Mix ingredients together stir to mix the spices evenly.

2. Cook in a big pot on low-med. Heat for at least 2 hours or cook in a crock-pot on low all day (at least 10 hours).

This is very good. It's so easy if you use the slow cooker to just dump, stir and come back later! When you want to find an easy to make and healthy winter meal this is a good one. It makes about 8-10 bowls and the best part is when put in a freezer bag it freezes really well. I consider this a healthy meal since it has no meat but plenty of protein. It's also easy on the budget. You can make some corn bread and invite a ton of folks over for dinner. When I cook light I need to be aware of the fat I use to cook my food and the other sugars and such I put into it. I can use sugar substitutes and light options for other fats and oils. I try adding more protein (like beans poultry and fish) to my diet and increase my intake of fruits and veggies.

NO NO NO to the BUTTER BUTTER BUTTER! You don't need ANY butter nor ANY butter substitute. JUST LEAVE IT OUT!

I was really surprised at how good this recipe is. I didn't miss the meat, it had the same flavor as regular chili but was more filling. It was also super-easy to make. I added a can of mushrooms. The leftovers froze well and it was just as good reheated as fresh. I will be making this again.

Vegetarian Chili has taken over 1st place with my family as their chili recipe. No meat is needed with this hearty dish, and knowing it is healthier for me is worth every satisfying bite.

This is a very good quick and easy recipe. I used olive oil instead of butter and I have also made it using a meat substitute (like Boca crumbles or texturized vegetable protein which I hope Sav A Lot can start selling for this recipe haha) It is delicious almost any way that you make it.

Absolutely the BEST Chili recipe. I enhanced it by adding meatless patties chopped up and a few grated carrots. Yummie! Served it with hot sauce to add and cheese to top it!

Great recipe. Cook in the Crock pot all day! The black beans give it a nice twist, and you can sub in a lot of other things to make it great. Thanks for sharing!

Just delicious! This is great to leave in the crockpot on Mondays. It's ready for supper and I get to enjoy taking the leftovers for lunch. To kick it up a bit I substitute one of the cans of tomatoes with a can of the tomatoes with hot peppers. My son really enjoys this. We eat it over corn chips with grated cheese on the top of it.
