Asian Salad: Prep time: 5 minutes

  1. Thinly slice about four green onions (only the white and light green potions) to measure about a 1/4 cup.
  2. Peel and slice carrots on the diagonal to make long thin ovals. Slice celery in the same way. Combine carrots, celery, onions 
  3. French dressing  1/2 sweet and sour sauce and half of the chopped onion in a salad bowl (Save the rest of the onion and sweet and sour sauce for the main dish). Mix well and chill in refrigerator. 

Beef" and Broccoli  Prep time: 35 minutes

  1. Add eight cups of water to large pot ( 6 quarts) and set over high heat
  2. Place beef broth over medium heat in a 1 1/2 quart sauce pan.
  3. In a bowl mix ground turkey, salt, garlic powder and pepper.
  4. Roll seasoned meat into 1/2 inch balls. Once broth comes to a low boil add 1/3 of the meatballs and cook for 5-8 minutes. Meatballs are done when they float and the centers are no longer pink. Remove meatballs to plate keep warm. Repeat until all meatballs are cooked.  
  5. When the third batch of meatballs are being cooked add NOODLES ONLY from instant noodle packs to large pot of boiling water and cook for 6-8 minutes until tender. 
  6. Remove last batch of meat balls to plate; cover with foil to keep warm.  Reduce heat to low and allow broth to simmer.  
  7. Drain noodles and return to large pot to keep warm. 
  8. Add soy sauce, Instant noodles beef seasoning packs, 1/4 cup (half original measure) of sweet and sour sauce and remaining sliced onions to broth. 
  9. Stir and simmer 3 minutes longer. .
  10. Pour broccoli into microwave safe bowl and microwave on high for 3-5 minutes until heated thoroughly. 
  11. In large pot combine meatballs, beef broth sauce, noodles and broccoli.
  12. Serve warm with Asian Fusion Salad.

Notes

I love this meal because it was a challenge! I wanted to give my family a Chinese style dinner on a squeaky tight budget. To say my guys are beef eaters is an understatement. To stay on budget  I needed to incorporate ground turkey in a way that they wouldn't notice. I also hate the crowded  noisy  giant mega-mart in my small town. I love our local Save-A-Lot. It is a friendly place to shop where everybody knows me. AND it has everything I need to make international favorites!
