Athlete’s Alfredo with Homemade Alfredo Sauce

Pasta alfredo doesn’t have to be packed with fat. The sour cream in this homemade alfredo sauce is the secret ingredient for making a low fat alfredo dish you’ll love to eat, without the guilt.



In a large pot, boil water over high heat. (Use just enough water to cover pasta, once you add it to the pot.) When water is boiling, add pasta and reduce heat to medium. Simmer uncovered until water is very shallow (about 10 minutes). Add all other ingredients, reduce to low heat, cover with the lid cracked and simmer for 10 minutes. Remove from heat and uncover the pot until the sauce begins to thicken.


It seems like my family eats out a lot more when we start to exercise and I think this is because we don't treat ourselves to our favorite flavors at home. I imagine that we feel guilty adding the amount of salt to home-cooked foods that our body craves, especially when we are sweating more and drinking more water. This homemade alfredo sauce recipe was invented for a volleyball player in my family who loves pasta alfredo but needs to watch her weight. The substitution of sour cream for the traditional cheese and the olive oil for the usual butter makes a low fat alfredo that keeps her satisfied and guilt-free!
