First pre-heat the oven to 350 degrees. Then cook your sausage until it's done. While the sausage is cooking slice the cheese in half set them aside, crack open the eggs in a large bowl. After the sausage is cooked let it cool for 5 minutes. In the bowl combine the sausage and eggs, pour into the pie shells, then place the slices of cheese into the egg and sausage mixture. bake for 35 to 45 minutes. Let the pie cool for 5 min. then cut & eat. You can use the egg whites to make it even healthier.

Notes

My children's day start at 5:50am and they have to catch the school bus by 6:37am. They wanted something warm and something that they could eat on the corner (or on the bus without any one knowing) so I came up with the breakfast pie. We would bake the pies on Sunday cut them and put them in sandwich bags so that during the week I would microwave them for 1minute and they could go to the bus stop.

I have eaten similar pies called mini quiches. They can be made with other meats, veggies, etc. The sky's the limit.
