Take broccoli and cheese to the next level with this broccoli soup recipe. Broccoli Cheddar Spinach Soup adds healthy spinach and creamy potatoes to the classic combo of broccoli and cheese for a satisfying, tasty soup.
Melt the butter in a large pot over medium heat. Add the onions and cook until golden. Add the diced potatoes, broth and broccoli. (It’s okay if the broth doesn't cover everything.) Boil covered over medium-high heat for 30 minutes. Add the frozen spinach, replace the lid and cook for another 10 minutes. Carefully blend in a blender until it reaches your desired texture. (See blending tips below.) Return blended mixture to the pot over low heat. Add cheddar cheese, then slowly add the milk. Add chopped chives and stir until everything melts together. For thinner broccoli and cheese soup, add ½ cup more milk.
This is really great broccoli soup! I made it for a Super Bowl party and everyone loved it. It has a little zip to it that everyone appreciated. It's easy for company — I transferred the finished Broccoli Cheddar Spinach Soup to a crockpot set on warm and put out a loaf of homemade bread and a big bowl of crackers. Everyone could help themselves. Sometimes I make my own broth. To make fat-free broth, chill your chicken broth in the fridge. The fat will rise to the top, so you can remove it before using the broth.
