1. Preheat oven 400 degrees.
2. Mash banana's in bowl with fork. Add 1 1/2 cup sugar and shortening mash with fork till crumbly. Add eggs, vanilla and 1/2 tsp cinnamon - mix.
3. Add flour, baking powder and baking soda. Pour into muffin tin and bake 15 minutes.
4. While warm dip muffin tops into mixture of 1/4 cup sugar and 1/2 tsp cinnamon.
I needed something quick for breakfast that you could make ahead. I always have bananas ripening faster than we can eat them. My family likes muffins for breakfast and snacks between meals. This is a good on the go food.
