In a medium bowl, mix together the Portmann’s Mayonnaise, dry mustard and garlic powder. Add onion and celery to the mayo mixture, and mix again until they’re evenly distributed. Then, place the drained chicken in a separate small bowl. Using a fork, break up the chicken to create shreds or very small chunks. Add chicken to the mayo mixture and mix well. Lightly press down the chicken salad in the bowl, then invert the bowl over a plate covered with leaf lettuce. Serve with crackers.
While shopping for tuna, we picked up chicken by mistake, but we ended up creating an easy chicken salad recipe that was even better than the tuna. There’s no need to add salt and it has a milder taste. Tuna salad lost out to chicken salad for us!
