Preheat oven to 400 degrees Fahrenheit. In a small skillet, sauté the chopped red bell pepper and the chopped red onion for 5-7 minutes, or until soft. Once cooked, set aside to cool. In a medium bowl, mix together salmon, egg, olive oil, sautéed pepper and onion, and 2/3 cup saltine cracker crumbs. Season with lemon pepper, salt and pepper. Refrigerate the mixture for 10-15 minutes, allowing to cool (it’s easier to shape the salmon patties this way). Take the mixture out of the refrigerator and form into 6 patties. Coat patties with remaining cracker crumbs, and arrange in a single layer on a baking sheet. Bake for 12-14 minutes. Remove from oven, and serve hot on a Baked Fresh® bun. Top with cheese and condiments of your choice, and enjoy!
