In a large skillet heat oil and saute rice until golden brown. Add soup mix, water and Jade Dragon soy sauce. Cover and simmer for 20-25 minutes or until water is absorbed. Make a hollow in center of rice and quickly stir eggs into it until set then mix with rice. Add carrots and stir until the carrots are mixed throughout.
This is quick and tasty served with any stir fry. We like to eat a lot of Chinese foods and so it's important that I have a great rice recipe for whatever we have to fix that night. In a pinch you can add sliced peppers and cooked cubed chicken or Portside shrimp peeled and just call it a whole meal!
