1. Preheat oven to 350°F. Spray a 2-quart casserole dish with nonstick cooking spray.
2. Spread prepared mashed potatoes in the bottom and sides of the dish. Combine turkey, frozen vegetables and gravy in large skillet and bring to a simmer, stirring occasionally. Salt and pepper to taste.
3. Remove from heat and spoon turkey mixture over mashed potatoes and spread evenly. Top center with stuffing.
4. Cover and bake 25 to 30 minutes, or until heated through.
