Mexican Pasta

For an easy Mexican dinner any night of the week, try this Mexican Pasta Skillet recipe. To make this Mexican pasta recipe even healthier, add your family’s favorite frozen vegetables.

1. In a 12-inch skillet, cook the meat over medium-high heat 5 to 7 minutes, stirring occasionally until thoroughly cooked; drain.

2. Stir in salsa, tomato sauce and water. Heat to a boil. Stir in macaroni and corn.

3. Reduce heat; cover and simmer 12 to 15 minutes, stirring occasionally, until macaroni is tender. Sprinkle with cheese.

4. Cover and let stand 1 to 2 minutes or until cheese is melted.

This is one of our family favorites. We also like to add tortilla chips before the cheese to give it some crunch. My kids are always asking for seconds.

Mexican Pasta I would of never amagine the family would love this recipe. It was such a fiesta hit the family requested that we have it at least once a week. It was quick and the kids loved it. Thanks Save a Lot for all the saving to complete this meal

easy to make...use a hotter salsa and/or add some red pepper flakes to give it more "kick"
