Mini Pizzas

1. Cut English muffins in half (open face) to number desired, place on small cookie sheet.

2. Put small amount of tomato sauce on each half, then sprinkle Italian seasoning and garlic powder on each.

3. Put desired toppings on top, then place a slice of mozzarella cheese on top. Place in oven for 5 to 7 minutes until cheese melts.

One afternoon, many years ago, when I was in High School, I had to entertain and cook up something for a boyfriend at the time with whatever ingredients I could find in my house and fridge. So, for a snack I conjured up this. It went very well. Ever since I continue to make them. Everyone loves it, even kids, they can help. It's easy and fast-simple! You also can top with grated parmesan cheese or crushed red pepper flakes if desired.

put the muffins in a toaster, then butter when done. put the toppings on, put the whole thing in a microwave for about 30 seconds or less and you've got the same thing. I put different toppings on, depending on my mood, good for any time of day, and no regular or toaster oven use - even kids can do this as long as they are careful with toaster.

to bookaddict: re-read recipe again: second line down, 4 works: ON A COOKIE SHEET"!

I make these in the toaster oven to avoid heating up the kitchen in the summer. First I toast the muffin, then put a little shredded cheese on the warm muffin before the sauce and other ingredients. Sometimes, I slice a tomato on top with cheese sprinkled on top of that.

My kids and I used to make these years ago and now I get to make them with my Grandchildren as my children remember their "good old days". These are great and they also make for fun times with family.
