Lip-smacking, spicy nachos with queso-meat sauce.
1. Crumble and brown the ground beef in a large skillet over medium-high heat, cooking until no pink remains.
2. Add the onion and all of the peppers, and sauté until the vegetables are tender (about 4-5 minutes). Drain off grease.
3. Stir in the taco seasoning and add 1 tablespoon of water. Cook 1 minute more. Stir in the queso until everything is evenly coated, and this will be your nacho sauce.
4. Arrange tortilla chips on a plate, and drizzle with the nacho sauce. Top with olives and parsley and serve.
You can also serve the ingredients (nacho sauce, chips, olives and parsley) in different bowls, so people can help themselves.
