Preheat oven to 450 degrees Fahrenheit and prepare a baking dish with non-stick cooking spray. In a bowl, combine flour, salt and pepper and stir. In a separate bowls, whisk the egg whites until frothy. In a third bowl, combine breadcrumbs, cornmeal and dried basil. Dip the defrosted fillets in the flour mix, then the egg whites and lastly the crumb mixture. Place the fillets in the baking dish and bake for 10-14 minutes, until the fish is easy to flake with a fork.
