1. Preheat oven to 400 F.
2. Dice cucumber. Mix cucumber and tomato with Coburn Farms Light Sour Cream and Marcum Soul Seasoning; set aside.
3. Place frozen Port Side Salmon Filets on foil-covered baking sheet. Bake salmon approximately 20 minutes or to an internal temperature of 165ºF.
4. Place cooked salmon onto plate and top with cucumber sauce; serve with Northern Bean Tomato Salad.
You can also substitute fresh, chopped green onion for the cucumber.
