Simple Stuffing

Ingredients

  • 1 can chicken broth (14 ounces)
  • 1/2 teaspoon black pepper, as needed
  • 1 1/2 cups celery, chopped
  • 1/2 cup fresh or frozen cranberries
  • 1 small onion, chopped
  • 4 cups herb-seasoned breadcrumbs

Directions

In a saucepan, combine broth, pepper, celery, cranberries and onion. Heat to a boil. Cover; cook over low heat for 5 minutes or until vegetables are softened. Add breadcrumbs. Mix lightly.

Ingredients

  • 1 can cream of mushroom soup (10.75 ounces)
  • 1/2 cup milk
  • 1 teaspoon soy sauce
  • 1 dash black pepper, as needed
  • 4 cups cooked green beans, fresh or frozen
  • 1 1/3 cups French fried onions (reserve 1/3 cup)

Directions

Preheat oven to 350 degrees. Mix soup, milk, soy sauce, pepper, green beans and 1 cup of the onions in casserole dish. Bake 25 minutes. Stir; sprinkle with remaining 1/3 cup onions. Bake for 5 more minutes.

Roasted Sweet Potatoes

Roasted Sweet Potatoes

Easier than boiling or mashing, roasting these potatoes brings out even more of their natural sweetness.

Ingredients

  • 6 sweet potatoes, fresh
  • 1/2 stick butter, unsalted, melted
  • Salt and pepper to taste

Directions

Preheat oven to 375 degrees. Wash sweet potatoes well, removing any blemishes. Cut sweet potatoes in half, lengthwise. Place potatoes on a baking sheet or roasting pan, coat with melted butter and season with salt and pepper. Turn sweet potatoes onto the cut side, leaving a little space between each piece. You may need to divide them onto two baking sheets, depending on the size of the sweet potatoes. Place sweet potatoes in preheated oven and bake for 45 to 50 minutes, or until fork tender.

Apple Cranberry Chutney

Apple Cranberry Chutney

Ingredients

  • 1 small onion, small diced
  • 2 tablespoons oil, canola
  • 1 1/2 cups dried cranberries, finely chopped
  • 3 cups apple, peeled, cored and diced, use a firm apple like Granny Smith
  • 1/2 tablespoon chili powder
  • 3 tablespoons fresh ginger, grated
  • 1 tablespoon grain mustard
  • 1/2 teaspoon salt
  • 2 cups cider vinegar
  • 1 1/4 pounds light brown sugar

Directions

In a pot, cook the onions in the oil over medium heat until translucent. Then add the rest of the ingredients into the pot and simmer until it has thickened. Serve warm or at room temperature.

Cheddar Smashed Potatoes

Cheddar Smashed Potatoes

This new twist with cheese adds a delicious richness to an old favorite.

Ingredients

  • 5 pounds red potatoes, washed and quartered
  • 1/2 stick butter, softened
  • 2 cups half and half
  • 1 cup cheddar cheese, grated
  • 1/2 cup sour cream
  • 1 bunch green onions, sliced thin
  • Salt and pepper to taste

Directions

Place potatoes in a large pot, cover with water, bring to a simmer and cook until fork tender. Drain potatoes well and return to pot off of heat. Using a hand-held masher, add butter and mix until melted. Mash in remaining ingredients and season with salt and pepper.

Southern Style Greens

Southern Style Greens

Start a new tradition this year with some old-fashioned, southern leafy greens.

Ingredients

  • 1/2 package bacon, cut into 1/2-inch pieces
  • 3 cloves garlic, sliced thin
  • 1 teaspoon red chili flakes
  • 1 bag pre-cut and washed mixed greens
  • 32 ounces chicken stock
  • 1/2 teaspoon cider vinegar
  • 1/2 tablespoon sugar
  • Salt and pepper as needed

Directions

In a large pot over medium-high heat, add bacon. Stir and cook until bacon is crisp and remove. Return pot and bacon fat to heat and adjust heat to low. Add garlic and cook for 3 minutes. Then add chili flakes and cook 1 more minute. Add remaining ingredients and bring to a low simmer. Loosely cover and cook until greens are tender. Adjust seasoning with salt and pepper, and garnish with crisp bacon.
